Roasted Cinnamon Pumpkin Seeds

This easy to prepare snack is sure to be a crowd pleaser!

Prep time: 15 minutes

Cook Time: 20-30 minutes


Ingredients:

Seeds from 1 large pumpkin

1 Tbsp Liquid stevia (or maple syrup)

1 Tbsp coconut oil (melted)

1 Tbsp ground cinnamon

Salt to taste

Directions:

  1. Preheat oven to 350F

  2. Take the top off of the pumpkin and remove the seeds from the inside.

  3. Wash the pumpkin seeds thoroughly. Lay on a towel to dry a little but they will dry out in the oven.

  4. Put in a bowl with the coconut oil, cinnamon, liquid stevia, and salt. Combine until seeds are well coated with cinnamon.

  5. Spread the mixture on a cookie sheet or roasting pan that is lined with baking paper

  6. Roast the pumpkin seeds for 20-30 minutes, until golden brown. Check them about every 5 minutes and stir.

  7. Once they are dry, take them out of the oven to cool and keep in an air tight container.
