Rosemary Chicken Salad

This was one meal I made from a rotisserie chicken. The Italian Chicken and Spinach, Chicken Broth and Chicken, Rice and Vegetable Soup came out of the same chicken! This rosemary chicken salad is not only delicious, it is easy to make!


Rosemary chicken salad in endive

Prep time: 10 minutes

Ingredients:

12 ounces shredded chicken (or however much you can get from the wings and thighs of a rotisserie chicken)

1 apple, cored and diced

3-4 tablespoons for dried cranberries/mixed berries

1 small container of plain greek yogurt

3 tablespoons of chopped nuts of your choice (pecans, walnuts, etc.)

2 tablespoons dijon mustard

1 tablespoon fresh rosemary, chopped

Salt and Pepper to taste

1 head of endive or leafy lettuce 



Directions:

  1. Combine chicken, apple, dried berries, yogurt, nuts, dijon, & rosemary in a mixing bowl

  2. Stir until combined. Add salt and pepper to taste

  3. Serve in endive bowls or lettuce wraps.

  4. Enjoy!

  5. OPTIONAL: Add a small cucumber/tomato salad on the side, topped with extra virgin olive oil
